made Turkey meatloaf!

Feta- Stuffed Turkey Meatloaf topped with Tzatziki Sauce

(Sides included: Roasted Garlic Mashed Cauliflower and Steamed String Beans)

Meatloaf Ingredients:

 ½ large onion, chopped

1 tbsp olive oil

1 tsp salt

1 package frozen spinach, thawed and drained

2 lbs ground turkey

¼ cup coconut flour (I use Bob’s Red Mill Organic Coconut Flour)

½ cup chicken stock

1 large egg

2 tbsp Worcestershire sauce

½ cup crumbled feta cheese

Preheat oven to 325F.

Heat oil in a large skillet over medium heat. Stir in chopped onions and salt. Saute the onions until they are translucent but not browned (approx. 15 minutes). Add in thawed and drained spinach and stir until heated through.

In a large mixing bowl, combine onion mixture with the ground turkey, coconut flour, chicken stock, egg, and Worcestershire sauce. Mix until very well combined. (I did this with my hands, prepare to get dirty!)

Place half of the turkey mixture into a 9×5 bread pan (already sprayed with some sort of cooking oil- canola, coconut, OO, etc.). Cover with feta cheese, pressing the feta down to adhere to the meatloaf. Place remaining turkey mixture on top of the feta.

Bake for 1 hour to 1 hour and 15 minutes, or until an internal temperature reaches 160F on an instant read thermometer. Careful not to overcook as there’s nothing pleasant about super dry turkey! But make sure you don’t undercook it either for fear of Salmonella!

Let cool for a few minutes. Cut into slices and drizzle with tzatziki sauce. I simply purchased a store bought tzatziki however you most certainly can make your own!

Comments:

          1) The loaf was nicely flavorful with the onions but next time I might add some herbs to the mixture such as dill.

          2) The loaf crumbled a bit when trying to slice it and that could either be because I didn’t let it cool long enough or I may need to use more coconut flour to help bind it all.

What is Coconut flour you might ask? Coconut flour is a soft flour produced from dried coconut meat. It is popular among grain-restrictive diets so you will probably find it in many gluten-free recipes. It is super high in FIBER and low in digestible carbohydrates. It has a slight sweetness to it so it makes a great option for baked goodies!

Side note: Coconut flour is not like most other flours. A little goes a long way. It acts almost like a sponge, soaking up moisture. Most recipes you find will have crazy wet:dry ingredient ratios. Click this link to learn more about its baking properties.
